Tsuyoshi Sasaki, Owner Chef
At the age of 18, Tsuyoshi started his training as a live-in trainee at one of Ginza’s old establishments where he worked for ten years. He continued working in the renowned Ginza area. He was subsequently invited to work as a head chef in Dubai. After coming back to Japan, Tsuyoshi worked at a Michelin-starred restaurant. He also helped the opening of Ginza’s Hakkoku.
After 21 years of career, Tsuyoshi opened one of a kind Sushi Ugatsu with his wife, who is also a seasoned chef, Maki Sasaki.

18歳から鮨職人の世界へ。 住み込みで10年勤めた銀座の老舗店から始まり銀座を中心に勤務。ドバイへ渡航しヘッドシェフを勤めた。帰国してからはミシュラン店での勤務。銀座「はっこく」のオープニングスタッフを勤めた。
職人歴21年目で妻で料理人の佐々木麻紀と夫婦で唯一無二の店「鮨うがつ」を開店する。
